whole 30 reflections (& recipes)


WE'VE OFFICIALLY COMPLETED OUR FIRST WHOLE 30!!!!!!!

I cannot believe that we actually have done this! When I told Zach a few months ago I wanted to try it out, I honestly never thought we would actually go through with it. But I'm sooooo proud of Zach and myself for following through with our plans and really sticking to it! We've both grown and learned and gained so much from doing the Whole 30 and we both feel so much more in control when it comes to the foods we choose to eat. And we both saw some pretty great results!

Overall, we both just feel so much better about ourselves and we can tell how much of a difference eliminating unnecessary unhealthy foods has made in our lives. I'm so happy that we actually did this because for a long time, I'd been really worried about how we were going to teach our children to choose nutritious foods when we, ourselves, rarely did! I'd always tell Zach, "we can't just feed our kids skittles and pizza!" Now that we've done the Whole 30, I know we'll be able to establish a healthy balance in our family and teach our children to eat what's right for them. Doing this program has really helped us to see that less is really more when it comes to the foods we eat. You really can live off of just fruits, vegetables, proteins, and healthy fats! And you can do it without feeling deprived!

If you feel like you've been needing a reset for your diet, I would wholeheartedly 100% recommend doing this program. It's difficult at first. And it takes a lot of planning, preparation, cooking, and determination. But if you can push through that first week, you'll see that it gets so much easier with every passing day.

Pico de Gallo

Sweet Potato Fries -
We generally just season with salt + pepper and either cinnamon or rosemary.

Buffalo Chicken Sliders -
We ate these four times while on Whole 30!! They're that good! You don't need to eat them as a sandwich either. Zach usually just mixed everything up and ate it with a fork.

Cauliflower Soup -
We substituted sweet potatoes instead of celeriac root. Would be really yummy with some rolls for dipping if you're not strictly on Whole 30.

Pot Roast -
Added two russet potatoes.

Paleo Nachos -
EVERYONE needs to try these. They're amazing!

Chicken Avocado Burgers -
We couldn't find ground chicken so we substituted with ground turkey.

Teriyaki Chicken -
I just chopped a few chicken breasts into one-inch pieces and marinated them in Coconut Secret's Teriyaki Sauce for a few hours in the fridge. Then cooked them with some olive oil over the stove. Super easy.

Crockpot Pulled Pork 

Egg and Sweet Potato Breakfast Casserole -
We prefer it with whole eggs instead of just egg whites.

Bacon Burgers -
We omitted the mushrooms.

Spicy Chicken Bites

Paleo Chicken Curry Stir Fry -
Omitted the turmeric. Used regular curry powder instead of red curry powder. Added chili powder. SO GOOD.

Taco Lettuce Wraps


Now... where are all those Rice Krispie Treats we've been hiding... :)
